About Sliabh Aughty Honey: The Leahy family of Sliabh Aughty honey and Natural Irish skincare are a family run business, bee keepers from Loughrea Co Galway in the Sliabh Aughty mountains. A proud family tradition which goes back four generations. The land on the mountain is natural and unspoiled with lots of lush meadows full of wildflowers and herbs, raised bog areas, covered with purple heather and bog cotton. A large portion of the mountain area is now an area of conservation. The mix of farming land and rugged mountain give a great range of Flora from the peaty limestone soil. Typical plants are Pussy Willow, Elderberry, Sycamore, Dandelion, Whitethorn, Chestnut, Clover, Blackberry, Wild Herbs and Heather. The combination of the fantastic landscape and flora gives Sliabh Aughty honey a unique and pure flavour. It is 100% raw, single filtered and unpasteurized it retains all of the pollens, antibacterial and medicinal properties.
Seasonal Heather Honey, produced in the Sliabh Aughty Mountains, Co. Galway, Ireland by Leahy Beekeeping. Dark in colour, Heather honey has a powerful aroma that is reminiscent of the heather from which it comes. Uniquely, it has a very unusual texture: it is thixotropic, which means it is like jello until you stir it, when it turns liquid. Stop, and it soon sets again. This honey does not crystallize, and rarely does in its pure form. The honey also contains tiny bubbles which makes it shimmer in the light. Its strong, rich smoky taste has been compared to toffee, and gets stronger the longer the honey is stored. In Ireland, it is highly-prized by connoisseurs and known as the “Rolls Royce” of honey.
