About Chateau de Gaure: Pierre Fabre represents the 5th generation of a family of winegrowers and returned to his roots by purchasing a property in 2004, Château de Gaure. With the support of renowned oenologist Marc Bertrand, they both introduced the Gaure range of wines to the Languedoc, which quickly received awards from “La Revue des Vins de France”. Pierre Fabre has chosen to stop using chemicals, in order to produce natural grapes of the highest quality, and the range is now in organic conversion. Pierre Fabre creates typical wines with supple and velvety tannins to please wine lovers, constantly seeking the right balance between nature and terroir.
Wine making: The grapes are harvested by hand at optimum maturity and transported in 15 kg openwork boxes to preserve their quality. They are then sorted and pressed directly. The alcoholic fermentation starts in 400 L barrels, under the impulse of indigenous yeasts. Once this is complete, malolactic fermentation begins to minimise the acidity of certain batches. The wine is then aged on its lees with regular stirring of the lees and topping up.
