About Château de Gaure: Pierre Fabre represents the 5th generation of a family of winegrowers and returned to his roots by purchasing a property in 2004, Château de Gaure. With the support of renowned penologist Marc Bertrand, they both introduced the Gaure range of wines to the Languedoc, which quickly received awards for “La Revue des vins de France”
Pierre Fabre has chosen to stop using chemicals, in order to produce natural grapes of the highest quality, and the range is now in organic conversion.
Pierre Fabre creates typical wines with supple and velvety tannins to please wine lovers, constantly seeking the right balance between nature and terroir.
Winemaking: Grapes are handpicked, and a first selection is done in the vineyard. After a second selection in the cellar, grapes are destemmed and put in concrete tanks. Maceration in “Nomblot” tanks for 3 to 4 weeks according to the grape variety and the vines’ age. Fermentation in concrete tanks with native yeast. Wines are aged in barrels for 12 months.
Tasting notes: Carignan brings fineness and freshness, Grenache gives aromas of black fruit (blackcurrant and blackberry), Syrah and Mourvèdre accentuate complexity and smooth tannins.
Food match: Smooth wine, perfect for an apéritif, and ideal partner of meat such as duck, lamb but also with cheese and surprising with bitter chocolate. Serving Temperature: 18°C
