About Château de Gaure: Pierre Fabre represents the 5th generation of a family of winegrowers and returned to his roots by purchasing a property in 2004, Château de Gaure. With the support of renowned penologist Marc Bertrand, they both introduced the Gaure range of wines to the Languedoc, which quickly received awards for “La Revue des vins de France”
Pierre Fabre has chosen to stop using chemicals, in order to produce natural grapes of the highest quality, and the range is now in organic conversion.
Pierre Fabre creates typical wines with supple and velvety tannins to please wine lovers, constantly seeking the right balance between nature and terroir.
Winemaking: The vines are located around the Château on soft loam at a lower altitude. The climate is defined by Mediterranean and oceanic influences. The vineyards have been certified as organic since 2008 and Biodyvin since 2022. The grapes are harvested manually when they reach optimal maturity. They are transported to the winery in 15 kg openwork boxes. This authentic technique preserves the quality of our grapes. Once the harvest is sorted, scraped and pressed, it is poured into concrete wine vats. After a period of maceration, alcoholic fermentation begins with the growth of natural yeast. The vat ageing process continues for between 8 to 12 weeks. The 10 months ageing is done in barrels of several different wines to insure and preserve the characteristics of each terroir. Finally, the wine reaches the delicate stage of blending which will define each batch and give the vintage its character.
