About Alsina & Sardà: The Alsina family have been tending vines since the 19th century. Their very beginnings can be traced back to 1852, in the property of Cal Janes, near the village of El Place del Penedès. In 1980, they began producing their own cava in a small family cellar in Ca l’Avi. Soon the production increased considerably and they expanded their facilities in 1985. The vineyards and the cellar are located in the very heart of Penedès area, influenced by the Mediterranean soft climate that delivers great freshness.
Vinification: Extraction of the free-run juice with light pressing, followed by fermentation at low temperature in stainless steel tanks. Second fermentation in the bottle with ageing for 18-20 months.
Description: 40% Macabeu, 40% Xarel-Lo and 20% Parellada. Greenish in colour with some yellow overtones, lively bubbles and crown formation. On the nose white and citrus fruits stand out with nuances of sweet bisciut and fresh yeast. In the mouth fresh and balanced.
What the press say: “Fish and chips are a classic, lazy weekend fare. Champagne would be a superb match, if not a little indulgent. For something perhaps slightly more in budget, Boutique wines has a Cava Brut Reserva demo Alsina & Sarda which would work excellently” Cathal McBride, Sunday Business Post
