About Alsina & Sardà: The Alsina family have been tending vines since the 19th century. Their very beginnings can be traced back to 1852, in the property of Cal Janes, near the village of El Place del Penedès. In 1980, they began producing their own cava in a small family cellar in Ca l’Avi. Soon the production increased considerably and they expanded their facilities in 1985. The vineyards and the cellar are located in the very heart of Penedès area, influenced by the Mediterranean soft climate that delivers great freshness.
Vinification: From 25 and 35 year old vines. Light maceration primarily with the object of extracting the maximum of aromatic compounds, followed by soft pressing to obtain the free-run juice. immediately after this, fermenting at low temperatures in order to preserve the aromatic and fresh compounds.
Description: 50% Chardonnay & 50% Xarel-Lo. Organic and vegan friendly. Aromas of white and floral fruits with intensity and persistence. In the mouth it is balanced with a long finish and fragrance.
